Simeon has been involved in floristry for over 27 years due to his family having a huge, successful florist business in Sydney including 10 shops. Simeon studied floristry around the world, in New Zealand, London, Amsterdam and learnt directly from Bill Kistler at American Floral Art School in Chicago. The American Floral Art School teaches top students from all over the world and Bill, who has recently passed away, was a chief designing florist for the "White House".
Since then Simeon had florist shops in the Regent Hotel in the city, or Sofitel as it is now, and then in Glenferrie road Malvern before he moved back to Sydney to help run the family business. Whilst in Sydney he was in charge of the design and corporate divisions of the business. Then in 1994 Simeon opened his own shop in Elsternwick with his wife Miriam and hasn't looked back since.
